To finish up my pumpkin stock, here is pumpkin porridge. This is another type of sweet porridge in Malay cuisine.
Ingredients:
~ Pumpkin
~ Mung beans - soaks 4 hours prior to cook
~ Malacca sugar or can replace with brown sugar
~ Castor sugar
~ Coconut milk
~ Pinch of salt
~ Water
Methods:
1. Boil mung beans until soft, add pumpkin.
2. When pumpkin soft, add all sugar and pinch of salt.
3. Slow down heat, add coconut milk
4. Cook until the porridge thicken a bit.
This is another type of pumpkin porridge I make while I was at kampung, the difference is i add a flour mixture in it.
