Dried Fruit Cake - Cake -e- Miveye Khoshk

I like to translate foods' name to persian language. I know somehow it didnt correctly translated but i love to put 'e' to connect 2 words. For example for today's recipe fruit cake direct translation to farsi is Cake Miveye khoshk. but when i put 'e' between the first 2 words, it seems gives a better name :)

My mom requested this cake for some times, but I just managed to bake it yesterday. This is a very easy recipe that you dont need mixer. My dried fruit cake - old skool way:


Ingredients:
~ 200g karreh (butter)
~ 2 cups of flour (art)
~ 1 cup of sugar (shekar)
~ 2 cups of dried fruits (mivehye khoshk)
~ 2 eggs (tokhme morgh)
~ 1 tspn baking soda
~ 1 tspn cream of tar tar
~ a pinch of salt
~ 1 cup of water

Methods:
1. Sift flour, take 2 tbsp and mix with dried fruits.
2. In a pot, take 3 tbsp of sugar, with medium heat fry the sugar until golden, pour water.
3. Add in the dried fruits and butter, when the butter melted, add in the baking soda and cream of tar tar and salt. The mixture will start to bubbling, turn off the heat. Let it cool for 15 minutes.
4. After 15 minutes, add in eggs and flour, mix well.
5. Pour the mixture to baking pan, bake for an hour 170C. 

Next time I thinkI am gonna addsome cinnamon powder to add the kick!

Oreo Cheese Cake (Cake Panir ba Biscuit Oreo)


I made this cake last week. I gave some to bff but unfortunately he couldnt consume panir (cheese) for the time being because of some health problem. Let me write the recipe for my reference later..

Ingredients:
~ 500 g cream cheese
~ 1 cup of yogurt
~ 2 eggs
~ 1 cup of castor sugar
~ 1 cup of butter
~ 30 oreo biscuits (but i substituted with cream-o brand)
~ 1/2 tspn vanilla extract

Methods:

1. Cover bottom of your baking tin with aluminium wrap to make sure water will not enter into the mixture. 



2. Separate the oreo fiiling. Divide the biscuits onto 3 parts. 1 at the left side, 15 biscuits for the cake crust, 5 biscuit for decoration and another 10 to mix with the cake mixture.

3. Melt butter

4. Finely crush the 15 biscuits.

5. Mix with butter and press to the bottom of baking tin for crust.

6. Whisk cream cheese, sugar and vanilla extract. Start with medium speed after 2-3 minutes change to fast speed until the mixture become fluffy

7. Add in egg one by one (no picture)
8. Add in roughly crushed oreo.

9. Decorate the cake as u wish. This time I put some oreo on top and the pattern i piped some chocolate extract and just prick the line with chopstick.


10. Steam bake for about 1 hour

11. After 1 hour, dont directly take the cake outside oven. Open the lid and let the cake cool down inside for about 30 minutes. After that, transfer to chill at refrigerator. Leave t least 4 hours before consume.

Banana Shortbread

A recipe by CMG. Delicious!


Ingredients:
~ 100 g brown sugar
~ 130 g  butter
~ 1 tsp soda bicarbonate
~ 1/3 tsp salt
~ 2 eggs

~ 300 g banana - mashed
~ 300 g flour
*
~ 1/2 tsp baking powder
*(*mix and sift)
~ 80 ml fresh milk
~ 1/3 cup walnut



Methods:


  1. With a mixer, beat brown sugar, butter, soda bicarbonate and salt until creamy. Beat in the eggs one in a time until mixture turn fluffy.
  2. Mix in the mashed banana, until mix well, add flour alternate with fresh milk until finish.
  3. Add in the walnut, pour into a baking tin, bake for 50 minutes-1 hour, 180c.

Orange & Yogurt Cake (Portogal va Mast Cake)


The idea of baking this cake came when there are  2 cups of yogurt left in fridge. Bff is a fan of yogurt, so do other Iranians but not me. I eat only fruity yogurt. But the other day I bought different type of yogurt for him which has a slightly sweet taste and he did not like it. So, before it expire better i turn it to something that is eatable.

After surfing to some recipes, i end up with recipe from Mrs Hana. Let me share it here.

Ingredients:
~ 220g self raising flour @ flour + 2 tsp baking powder
~ 190g sugar
~ 180g plain yogurt
~ 3 eggs - separate white and yolk
~ 60ml orange juice
~ 1 tsp grated orange skin
~ yellow food coloring

Methods:
~ Beat white eggs until soft peak, put aside
~ Beat butter and sugar until white, add egg yolks
~ Add in grated orange, juice, yogurt and flour, mix well
~ Mix the 2 mixture
~ Bake in oven 190 degree, 50 minutes

p/s: I love to watch bff munching any cake I bake. Normally he will eat it for breakfast and 5 o'clock tea.

Sicilian Orange Cake (Cake-e-Portogal)

I did mentioned on yesterday's post about baking. I baked sicilian orange cake which get  positive critic from my permanent jury, who else bff. I followed recipe from the skillful Mrs Rima. But a little improvised since I did not have enough self raising flour.

Ingredients:
*250g butter
*250 self raising flour (i only have 110g of SRF, what I did was I mix 150g plain flour with 2 tspn of baking powder and 1/2 tspn of salt, after mixing, weight 140g of the mixture, sift and mix with the "original" SRF)
*250g caster sugar
*4 medium size eggs
* 11/2 tspn of orange zest
*85ml fresh orange juice

Methods:
*Preheat the oven to 170C. Grease and line a clip-sided round cake with non-stick baking paper.
*Using an electric whisk, cream the butter and sugar together for 4-5 minutes until very pale. Beat in the eggs, one at a time, beating very well between each one, if necessary adding a spoonful of flour with the last egg to prevent the mixture from curdling. Beat in the orange zest. Add the flour all at once and mix in well, then slowly mix in the orange juice.
*Spoon the mixture into the prepared tin and bake on the middle shelf of the oven for 45-50 minutes or until a skewer, inserted into the centre of the cake, comes out clean. If it starts to brown too quickly, cover loosely with a sheet of lightly buttered foil.
*Leave the cake, in its tin, to cool on a wire rack, then carefully remove the sides and base of the tin and peel off the paper. Put it onto a serving plate.


The Outcome, soft and fluffy, serve with chai (tea) for breakfast. 


Marble Cake

My first attempt to bake marble cake. Recipe from CMG a very popular food blogger in Malaysia. TQ CMG for this superdelicious recipe. It turn out very soft and  fragrant. I gave half of it to bff and he said "you should bake this more often as i like it very much! khoshmazas (delicious!!) - smile till sky haha :))
