Basil & Coriander Roasted Chicken

Another easy recipe I want to share here. If you are a student like me, but hate eating outside because outside food is tasteless and you got bored, try this recipe. Easy and multi-tasking, I mean you can do other things while you are cooking. I managed to clean my budgies and took a shower + scrubs!

I took out chicken from freezer and put at the lower side of refrigerator in the morning before going out to university. At 5 when came back, the chicken already defrost and ready to be cooked.

Ingredients:
~ Chicken
~ Carrot, boil for 10 minutes
~ Potatoes, boil for 10 minutes
~ Garlic cloves
~ Onion
~ Handful of basil leaves
~ Handful of coriander leaves
~ Lemon juice
~ Olive oil
~ Black pepper
~ Salt

* No measurement because it's all up to you to balance the taste and how much you wanna cook. Thats why I called this recipe as easy! Just mix everything, and roast in oven 180 degrees for 1 1/2 hour. Done!

Malaysia, Iran, Oil

What the hell is happening? Halting Iranian oil import to avoid US sanctions??? Where the hell you put Malaysia's dignity oh minister? After this what else, giving land for US army for a "world peace" plans?
Oh my Malaysia fellows, you know what will happen soon? Increase of oil price definitely! You think Arab Saudi is really a good source for oil and a good friend to be?
Then what will happen to our palm oil industry if Iran stop to buy our palm oil? Yes, our parents back at hometown who now earn at least 1k/month for the palm oil plantations will lose it.
Come on government, why you did this? I always proud of you guys of stabilizing our economy but this time totally I regret! Please stop depending on US! If not, sooner or later or we are already become the slave of AMERICA!

Nowruz 1391

I think it's not too late to wish Nowruz Mobarak as I just have the chance to update my blog today after came back from Korea. Nowruz was celebrated on (20th March) around 1.30 p.m. Korea time. There was nothing special that day until I came back and made small late celebration with bff. I managed to make sofreh 7 sin even it's not complete 7 coz I failed to grow sabzeh which turned rotten last week before flying to Korea. And I don't know how to make samanoo (or maybe I was lazy to learn). And I finished Sumac stock.

This is my 1391 Nowruz sofreh 7 4 sin. Sir, Sekkeh, Serkeh, Sib, is Shirni can be counted?

On Nowruz day, Persians serving sabzi polow ba mahi (vegetables rice with fish). So, I decided to serve bff this menu to make sure he doesnt miss this menu on this year Nowruz. He requested also fried prawns and mix vege. Served with homemade torshi sir (pickle garlic) which I made last September.

Our late Nowruz 1391 dinner table

Surprise underneath my plate was my eidi (eid present) bff put for me. Thank you so much azizam. Your presence near me is the biggest eidi ever for me. This year Nowruz is the 4th year we are together. Full of joys and tears we shared together. I know deep inside his heart, he miss to celebrate it near his family at his hometown, beloved Iran. Inshallah, if everything goes well as planned, you will have it next year azizam. On this Nowruz, I pray the best for us. Let Nowruz will be the beginning of all great things we wish for.

Chahar shanbeh soori 2012

Chahar shanbeh soori is celebrated on the last wednesday of the year, before nowruz. Persians will jump on a bonfire. It is a symbol of burning of the 'yellows' or bad things happened on the year and hopefully we will start the new year clean. They also sing and dance as a pre celebration of nowruz.

I attended 2 different chahar shanbeh soori events this year. One at singapore n another one at jb.

Just a simple celebration at spore. We were there for about 30 mins and we went to jb to see how they celebrate there.

What a big celebration at jb. A crowd of iranians were dancing until 12am. Not to mention the drunks! I was a bit shocked because it's like im in an open club!! I'm not sure if this is the really right way of celebrating chahar shanbeh soori. I think persians need to go back to the history why they are celebrating chahar shanbeh soori. Its for culture sake not self-satisfaction.

All in all, that night i had fun meeting my friends, especially my bahal(great) dorna. And we jumped together twice. I hope my new year will start with all brand new good things and leave the bad ones...

Khuneh Tekuni

Spicy Crab in Coconut Milk (Tond Karchang ba Shir Nargil) with pegaga leaves

Wahh..this dish has a unique name is Persian language. Correct me if I translated it wrongly. In Malay it's called Masak Lemak Cili Api Ketam. For a long time I'm craving to eat crabs. But you know, it is not appropriate to eat crabs in a crowd because you need to use your 10 fingers to suck all meat from the shell. So I bought the crabs for RM14.90/kg and eat it until the last meat with my niece and nephew. What a satisfaction! The meat was so juicy. Tips from my mom: to get a full meat crab with roe, make sure you buy crabs during full moon. I'm not sure the logic behind that but it is true because now is a full moon time, and I bought full meat crabs! Coincidence...

Ingredients:
~ 1 kg crabs
~ 8 bird eyes chili
~ 2 inch fresh turmeric
~ 1 shallot
~ 1 garlic
~ 1/2 cup thick coconut milk~
~ 2 cups water
~ 1 dried tamarind
~ a handful of pegaga leaves
~ Salt, sugar, msg to taste

Methods:
~ Pound chili, turmeric, salt, shallot and garlic finely
~ In a pot, heat some oil and stir in the pounded mixture until smell arise
~ Pour in water, when boil add in the crabs and coconut milk
~ Boil for 5 minutes, add in the pegaga leaves and dried tamarind
~ Taste with sugar and msg

Kabab Tabe'ei (Pan Kabab)

Cooking mood has come..I need to clean up fridge stock after long time they sitting there..First reason because nowruz is coming, I'm doing khuneh tekuni (spring cleaning) which I will share on the next post. And 2nd reason coz I'm going to Korea!!Yeah winter sonata, I'm coming to you :) I don't wanna leave the fridge full of treasures coz if suddenly blackout, my fridge will rotten..I remember a post by Xiaxue, she went to US for a long period and when she came back, her house smelled like s**t caused by the malfunction refrigerator. Oh don't mention it, with maggots !!

So tonight, my menu is kabab tabe'ei or pan kabab. An easy peasy kabab recipe. Good for a lazy girl in a cold day..like today..

Ingredients:
~ 300 g gusht charkh kardeh (ground beef/lamb)
~ 2 medium onions, grate
~ 2 ripe tomatoes, slice
~ 1/2 tsp black pepper powder
~ salt to taste
~ oil
~ some saffron liquid

Methods:
~ Mix beef, onion, pepper, salt and saffron well
~ Put a little oil in pan, just to make sure the kabab will not stick to the pan.
~ Put all of the mixture to the pan and press it as thin as can or until cover all of the pan bottom.
~ Arrange tomatoes on top
~ On a medium to low heat, let the kabab cook for 20-30 minutes.

Tips: Don't put too much oil because the kabab will cook by steaming process from water inside the mixture. It will evaporate and you will see the kabab's size will shrink.

Tonight I had it with kimchi. Yumm!

Crispy Fried Squid (Hasht Pa Sorkh Karde)

Squid is hasht pa in Persian language, direct translation is 8(hasht) legs (pa). Isn't that cute?? 8 legs is a squid, an animal with 8 legs is a squid  ^o^.. In Malay it is sotong,,a totally different name without any other meaning..haha..whatever...

So back to today's recipe, a crispy outside and soft inside fried squid dip in sweet chilli sauce. Sounds good ya? Ok lets try this:

Ingredients:
~ 1 kg fresh squids cut into rings
~ 2 eggs, beat
~ 1 cup of rice flour*
~ 2 cups of flour*
~ Salt*
~ 1 tbsp chicken powder*
~ 1 tsp turmeric powder*

Methods:
~ Mix * ingredients
~ Dip the squids in the egg and into the flour mixture. Make sure all of the squid coated.
~ Deep fried until golden brown
~ Eat with chilli sauce mix with a little water and a pinch of sugar

Tips: To avoid squid to explode during frying, make sure you always coat it with egg and fry it in a short time. Because over cooking it will make the water comes out from the squid and caused the explotion.
